Good balance and complexity stand out in this PDO, raw sheep and goats' milk cheese from Castelo Branco, in the Beira Baixa region of Portugal. Its buttery, semi-soft texture has many tiny eyes in its pale yellow paste, and is rightly described as "springy". The flavors are rustic, barnyardy, floral and piquant, with a hint of bitterness on the finish, endemic to many Portuguese cheeses.
