A rare find: a goat cheese with a washed rind. Too bad, because the combination is wonderful, at least in this tomme. Well-balanced and on the robust side: barnyardy, lightly pungent, creamy and sweet, with hints of hazelnuts and damp hay. No unpleasant animal flavors, although the aroma is fairly barnyardy. The paste is springy and semi-soft, and will plump out on the cut sides as it ripens. A well-made cheese, sure to be a hit among your most jaded customers. Made in Ariege, Midi-Pyrenees, France.
