Whereas Salers is often confused with Cantal/et, there is one major difference: The AOC designation requires Salers to be made only from the raw milk of cows that graze on Auvergne mountain pastures in the summer. (Cantal can be made year-round.) This gives the cheddar-like cheese extra floral notes to enhance its rustic, fruity, nutty flavors. Expect a "cellar-y" finish with earthy notes reminiscent of white pepper. Quite rare in this country, and well worth carrying to please the most jaded cheese connoisseurs. A full Salers wheel weighs upwards of 80lbs; this quarter-wheel brings it within reach of most retail and food-service accounts.
