A very rare gem from the Haut-Savoie in the Rhone-Alps, expertly aged by affineur Denis Provent of La Laiterie des Halles in Chambery. While "persille" usually denotes a blue cheese (the literal translation is "parsley," used to describe the color and curly shape of blue cheeses' molds), this cheese doesn't always have blue molds in it; rather, its production methods encourage this growth, should it occur. Most often we find the semi-firm, crumbly paste sans bleu, beneath the mottled, brown-and-white rind, which resembles that of Tomme de Savoie. Its flavor is musty, yeasty, lactic and barnyardy, and as it matures it sometimes takes on the spicy flavor of blue, even if no blue is present. A must for the most jaded cheese connoisseur.
