Notable Loire Valley cheesemaker Pierre Jacquin's makes this AOC Pouligny-Saint-Pierre, named after the particular village of its provenance, in Berry. This tall, bright-white, rindless goats' milk cheese is in the shape of a four-sided pyramid with a very small apex. When young, it is moist and somewhat loose-curded; as it ages, it may develop a bit of harmless blue mold, and the texture will tighten and lose moisture. Expect milky-sweet, tangy flavors when young, and nutty, piquant notes with a hint of black walnut when mature.
