Argentines of Italian extraction created this hard, salty grating cheese loosely based on Pecorino Sardo from Sardinia, the sheep-filled Italian island. Whereas the Sardinian cheese is made of sheep's milk, this one is 100% pure cows' milk, giving it a flavor slightly less sweet and salty, but more nutty, than its Italian cousin. Ideal for those looking for a reasonably priced grating cheese.
