Fromagerie E. Graindorge washes the rind of their traditional Normandy Camembert with Calvados, the local apple brandy, giving this earthy, pungent cheese something extra: a fruity, boozy intensity. The paste, when young, is springy, with numerous small eyes; as it ripens, it will liquify and become more pungent. Its closest cousin is Livarot, and while this one doesn't have the AOC designation, the cheesemaker considers Le Grain d'Orge "c'est un vrai fromage normand."
