This traditional cheese matures for at least 3 weeks in humid cellars in the vineyards of the Alsace region, where it is brine-washed in a solution containing just a touch of Kirsch, the cherry liqueur, and then left to develop a bit of a bloomy rind, and finally topped with a fresh sprig of fern. A true farmhouse delight, it is salty, savory and pungent with sweet, butterscotch undertones and a buttery, melting feeling on the palate. A very pretty cheese, sure to catch the eye of the most discerning customer.
