While Fromagerie Jacquin is known for their goats' milk cheeses, and rightfully so because the overwhelming majority of their line are chevres, they also produce a scant few cows' milk cheeses, such as this lovely tomme. The literal translation -- "fresh cheese from cow country" -- says it all. Rindless, moist, milky and nearly spreadable, it is similar to Delice de Bourgogne and Regal de Bourgogne, except its fat content is lower: this one is 45% m.g., compared to the others, with 72% and 75% m.g., respectively.
