"Necessity is the mother of invention," and nowhere is that more relevant than on a farm, where profit margins are low, labor needs are high, and a great deal of creativity is required to function. Valbreso is but one example, and a delicious one, at that. When the powers-that-be decided to limit the area in which sheep's milk could be collected to make famous Roquefort blue, a great number of Rouergue-area sheep farmers found themselves without a market for their milk. They came up with Valbreso, a mild, lactic, not-too-salty feta-style cheese with a creamier texture and gentler flavor than its Greek counterpart. Versatile and pleasant. These large blocks are ideal for retail re-packing and restaurant uses.
