D'Affinois Mini 40/30G (P)

This is one of those cheeses a retailer can hardly keep in stock, customers love it so much, and now it's available in a handy "mini" size. It has a friendly, appealing appearance: white, cottony rind barely containing an oozing pillow of unctuous, ivory-colored paste. It has an even friendlier flavor: rich, creamy, melts-in-your-mouth, with balanced salinity and the barest hint of mushroom. It's similar to brie, but without even a hint of pungency. The milk is "ultra-filtered" prior to production, allowing for expediency in ripening, and retention of a bit more protein and calcium. Made in France of pasteurized cows' milk by Fromagerie Guilloteau.
