Onetik, one of the largest producers of Ossau-Iraty, branches out into goat territory with this rustic, traditional goat tomme, aged 2+ months. Beneath the grey-brown natural rind, the paste is flaky and semi-firm, yet moist and melting on the palate. Even those normally adverse to goat cheeses will gobble this one up, it being sweet and gentle with a pleasant lactic finish. Made of pasteurized milk in the Basque region of France.
