This luscious, elegant cheese, created by Henri Androuet in the 1930s, is named for the French gastronomic essayist, Jean Anthelme Brillat-Savarin. Made in Normandy of cows' milk enriched with creme-fraiche, its butterfat content -- 75% m.g. -- places it in the triple-creme category. Beneath its fluffy, white rind, its paste has a velvety-smooth texture. Its flavor is buttery with moderate brininess and a very slight tang. At 100g, this size makes it ideal for cheese plates as well as retailers seeking a fine cheese for the self-serve case.
