Blue cheeses made with goats' milk are pretty rare and that's too bad, because they are exceptionally delicious. Fromagerie Jacquin's version is a prime example. The dense, moist, bright-white paste is generously striated with dark blue-green veining, and the flavors are nuanced and assertive with none of the "goaty" notes of lesser chevres. Expect a pleasant balance of fudgy, minerally, sweet, salty, milky flavors. Retailers will appreciate the unique, triangular log shape of this cheese.
