Within the washed-rind cheese family, this one is on the more welcoming end of the spectrum: sweet and milky, with notes of hazelnuts and butterscotch. More yeasty than pungent, it has a lingering sweet finish. The 400-gram wheels are covered with a cheerful orange-red rind -- courtesy of the beneficial Brevibacterium linens that flourish from the washing of the rind -- and just underneath is a layer of smooth creaminess, surrounding a pale, flaky center. Made of sheep's milk in the Haute-Corse region of the French island of Corsica.
