Isigny Butter Rolls (P)

Isigny butter has been made since the 16th century, and it gained its AOC status in 1986. While European butter has become quite popular in the US, many specifically insist upon Isigny AOC because of the region's terroir -- the mild, damp climate, near the sea, enjoys the benefits of the Bessin and Cotentin marshes -- and the cows grazing there feed on grass rich in iodine, beta carotene and trace elements. This gives the butter a natural yellow like buttercups, a faint taste of hazelnuts and more vitamin A than is found in most butters. The foil-wrapped roll provides a classic presentation.
