Cute little barrels of sheep's milk cheese are covered with a thin, waxed, cross-hatched rind, the color of caramel. Inside is a straw yellow paste, semi-soft and solid, with a few tiny eyes. The flavors are straightforward and agreeable: nutty, smooth and grassy-sweet, which make it a fine breakfast or dessert cheese, as well as a fine table cheese for any time of the day. One of the most popular Basque cheeses in the United States. Pasteurized; from the French Pyrenees.
