This sunny cows' milk cheese has a semi-firm, deep orange paste colored with annatto, a seed from a bush indigenous to the Caribbean and South America. Cut into it and inhale the aroma of walnuts. Aged for 3 months, at this stage it's easiest to cut into (compared to its older cousins), and tastes similar to mild cheddar: mildly sharp, milky, tangy, and nutty, with a little salinity. Its appearance -- it looks a little like a slightly flattened bowling ball -- and bright paste will draw a great deal of attention from curious customers.
