A very friendly, uncomplicated cows' milk cheese from the northern Pyrenee plains of France. The plump, round wheels are dipped in an inedible caramel-colored wax, and the semi-soft texture is smooth and springy -- translated to English, the name means "Soft [one] from the mountains." Mild and fruity, it has a creamy, melting mouthfeel that makes it useful as a table cheese and a cooking cheese. Pasteurized.
