It takes 600 liters of fresh milk from the red-and-white Montebeliard breed of cow to make one 80-lb wheel of Comte! AOC regulations dictate that each cow must have at least one hectare of verdant Franche-Comte pasture on which to graze. Cows milked for this cheese are never fed silage, and the milk must never be pasteurized. Made in the village of Jura, this Comte is aged for 6+ months and is likely the youngest you will find in the USA. It has a smooth, compact, semi-firm paste tasting of toasted hazelnuts, with tangy, fruity notes. Perfect for fondue or quiche, or melt over a sandwich or a crock of soup. Raw milk. Retail shops will appreciate this option; the cheese comes cut and wrapped in approximately half-pound pieces. No muss, no fuss!
